As bottles of Hacienda de Chihuahua state "Sotol, like Tequila is a type of Mezcal". The original bottles of Hacienda de Chihuahua "Sotol" proudly proclaimed to be made with 100% Agavácea. This is not blue agave, but a wild relative that grows only in the High Chihuahuan Desert in Northern México. The products packaging has changed and now I'm not so sure if they are using 100% distilate of this wild agave. I'm trying to find out. I personally have been through 4 or 5 bottles of this 100% rested version as it has been one of my favorite spirits. Very light, amazingly smooth, and bursting with agave flavor, I would choose this over many rested versions of tequila. Hacienda de Chihuahua claims that forms of this highly prized nectar have been around for over 800 years and I understand that homemade versions of Sotol are common in Northern Mexico. Similar to other agave spirits from Mexico, like Raicilla and Bacanora, Sotol has mostly been thought of as a sort of 'moonshine' but this product is definitely a high quality spirit.
